Tostada is originally from Mexico around 2000 years ago. Tostadas was said to be invented around the Monte Alban ruins but no specific person invented them. Tostada is a Spanish word meaning "toasted". They are made of corn or flour tortillas that can be served baked, fried or toasted.

May 5th is National Enchilada Day.

The enchilada is similar to papadzules a traditional Mayan dish, which also comes from the Yucatan region.

The enchilada is one of the dishes mentioned in Mexico’s first cookbook in 1831.

Enchilada is the past participle of Spanish enchilar, “to add chile pepper to”, literally to “season (or decorate) with chile.”

While the word “taco” literally translates to “plug” or “wad” a small hole, it also translates to “light lunch” in Mexican Spanish. Tacos predate the Europeans in Mexico and were discovered to be the food of choice by the indigenous folk in the Valley of Mexico.

October 4 is National Taco Day and because people eat nearly 4.5 billion tacos each year, it deserves it’s own day of recognition.  They’re immensely popular most likely due to the endless variations you can make them with.  For example, you can get your taco with fish, chicken, pork, steak or beef and you can add numerous vegetables, spices, guacamole or dozens of cheeses.

Military Appreciation Day

The first known appearance of the word “nachos” in English dates to 1949, from the book A Taste of Texas.

Nachos are the staple of not one, but two holidays.  In addition to November 6, National Nacho Day, Piedras Negras, Mexico observes El Dia del Nacho on October 21.

Our hero Nacho created the dish while working as the maître d’ of a restaurant in Piedras Negras, Mexico.  Before closing, wives of U.S. Army personnel stopped in for a bite to eat.  Since he needed to make something fast, and didn’t have many ingredients, the maître d’ combined the first three things he found in the kitchen:  shredded Wisconsin cheddar, tortilla chips, and sliced green jalapenos.  After tasting this delight, the women asked what this creation was called, he replied “Nachos Especiales..
